
Turkey Meatball Subs
Servings: six subs or 12 sliders
Ingredients
6 multigrain sub rolls
1 cup of your favorite tomato sauce, homemade or store-bought
1 cup of mozzarella, shredded
Meatballs
1½ lb ground turkey
2 tablespoons tomato paste
2 tablespoons water
½ medium onion, diced,
½ teaspoon thyme
½ teaspoon oregano
½ teaspoon kosher salt
¼ teaspoon fresh ground pepper
¼ cup parsley
¼ cup Parmesan cheese, grated
1 tablespoon olive oil
Seasoned bread crumbs
Directions
Preheat over to 350.
To make the meatballs, mix all ingredients (except olive oil) together and shape into 18 balls. Add a tablespoon or two of bread crumbs if the mixture is too soft to work with. Place the meatballs on a sheet pan and drizzle with olive oil. Bake for 25-30 minutes.
To assemble, place 3 meatballs on a sub roll. Top with tomato sauce and mozzarella. Place in oven and bake until cheese melts, about 5 minutes.
