Servings: six burgers or 12 sliders
1½ lb ground turkey
½ cup fresh bread crumbs
¼ cup ricotta cheese
1 tablespoon Dijon mustard
2 spring onions, chopped
¼ cup flat leaf parsley, chopped
a pinch of cayenne pepper
½ teaspoon kosher salt
¼ teaspoon fresh ground pepper
6 whole wheat buns
2 tomatoes, sliced
1 head leafy green lettuce
Sweet sandwich pickles
Preheat grill using medium direct heat.
Gently mix all burger ingredients together. Shape into six patties. Oil the grill and cook the patties for 5-6 minutes per side. Allow to rest for 5 minutes before serving.
Top burgers with tomatoes, greens pickles and mustard.
