
Shrimp Fried Rice
Servings: six
Ingredients
1 lb shrimp, shelled and deveined
2 cups jasmine, cooked according to package directions
1 tablespoon sesame oil
4 eggs, lightly beaten
½ lb snow peas, sliced
4 green onions, thinly sliced (white and pale green parts)
3 tablespoons oyster sauce
2 tablespoons low-sodium soy sauce
1 tablespoon agave
1 cup bean sprouts
Directions
In a small bowl, mix together the oyster sauce, soy sauce and agave. Set aside.
Heat the oil in a large non-stick skillet or wok, over high heat. Add the eggs and cook for 1 minute, stirring continuously. Add the snow peas and green onions to the pan and toss to combine. Add the shrimp and cook for 2-3 minutes, until shrimp are opaque.
Add the cooked rice to the pan and toss to combine. Cook until rice is heated and all ingredients are combined. Stir in the soy mixture and the sprouts. Toss and serve.
