Pasta with Fresh Cherry Tomatoes

Servings: six

Ingredients

1 lb whole-wheat spaghetti
¼ cup olive oil
2 pounds cherry tomatoes, halved
2 cloves garlic, minced
1 lemon, zest and juice
2 tablespoons basil, chopped
2 tablespoons fresh mint, chopped
2 tablespoons flat-leaf parsley, chopped
½ cup Parmesan cheese
Kosher salt and fresh ground pepper

Directions

Place the olive oil and next 6 ingredients in a large bowl.  Season with salt and pepper.  Allow to marinate one or more hours at room temperature.

Bring a large pot of water to a soft boil.  Add spaghetti and cook following package directions.    Top with fresh tomatoes and Parmesan cheese.
