
Curried Wheat Berries
Servings: six
Ingredients
1½ cups wheat berries
1 cup red seedless grapes, halved
2 spring onions, sliced (white and pale green parts only)
½ cup dried apples, coarsely chopped
½ cup pistachios, coarsely chopped
¼ cup flat leaf parsley
Curry Dressing
½ cup plain Greek yogurt
3 tablespoons white wine vinegar
2 tablespoons agave
2 tablespoon Dijon mustard
2 tablespoons curry powder
Directions
To make dressing, whisk all ingredients together and refrigerate until ready to use.
Place wheat berries in a large saucepan. Cover with water (by 2 inches) and bring to a soft boil. Reduce heat to low, cover and simmer for 2 hours. Drain and set aside.
Combine the wheat berries, and remaining ingredients in a bowl. Toss with the dressing and serve.
Note
To speed the cooking time, soak the wheat berries overnight in water. Drain, add fresh water and cook for 1 hour.
