8 tablespoons unsalted butter, room temperature
¾ cup agave
2 eggs, room temperature
1 cup plain Greek yogurt
1 cup flaked coconut
2 teaspoons coconut extract
2 cups whole-wheat pastry flour
2 teaspoons baking powder
½ teaspoon salt
Preheat oven to 350. In a medium bowl, sift together the flour, baking powder and salt.
In a mixer, cream together the butter and agave. Beat in the eggs, one at a time. Add the coconut extract, yogurt and coconut. Mix until ingredients are incorporated. Add the flour mixture and mix only until combined.
Pour the batter in a greased loaf pan. Bake for 45 minutes, or until toothpick inserted into the center comes out clean.
