Chicken Sauté

Servings: six

Ingredients

1½ lb boneless, skinless chicken breasts cut into one-inch cubes
Kosher salt and fresh ground black pepper
2 tablespoons canola oil
4 cloves of garlic, minced
1 bunch scallions, sliced and rinsed
3 tablespoons rice vinegar
4 tablespoons hoisin sauce
1 cup cashews
3 cups steamed basmati rice

Directions

Toss the chicken with the salt and pepper.  In a large skillet, heat oil over medium heat.  Sautee chicken until brown on all sides.  This step may need to be done in several batches.  Return all chicken to the skillet and add the garlic and scallions.  Cook, stirring occasionally, until chicken is cooked through, about 5 minutes.  Add the vinegar and cook until evaporated.  Add hoisin and ¼ cup water and cook for an additional 2 minutes.  Stir in cashews and serve over rice.
