Caramelized Onion, Fennel and Pancetta Pizza
1 prepared pizza shell
4 ounces goat cheese, room temperature
2 ounces pancetta, diced
½ medium red onion, thinly sliced
1 fennel bulb, cored and thinly sliced
2 cloves garlic, minced
1 tablespoon fresh oregano
Kosher salt and fresh ground pepper
Preheat oven to 425. Place pizza shell on a cookie sheet or baking stone. Mash goat cheese and spread evenly over pizza shell, leaving a 1-inch border.
Heat skillet over medium heat. Add pancetta and sauté until crisp, about 5 minutes. Remove pancetta with a slotted spoon (reserving fat) and set aside.
Add onions and fennel to the skillet. Sauté until caramelized, 15-20 minutes. Add garlic and cook for 1 minute. Remove from heat.
To assemble pizza, top with onion and fennel. Spread pancetta and oregano evenly on top. Drizzle with a little olive oil and balsamic vinegar.
Bake according to pizza shell directions, approximately 12 to 15 minutes.
