Black Beans

Black Beans

Servings: six

Ingredients

2 large cans black beans, drained and rinsed
1 tablespoon canola oil
1 red onion, diced
2 cloves garlic, minced
1 teaspoon ground mustard
½ teaspoon ground ginger
1 tablespoon agave
1 tablespoon Worcestershire sauce
4 oranges, reserving the zest from 2 oranges
Kosher salt and fresh ground black pepper

Directions

Heat oil over medium high heat in a medium-size Dutch oven.  Add onions and sauté for 10 minutes, until golden and soft.  Add garlic, mustard and ginger and cook for 1 minute.  Add remaining ingredients and bring to a gentle boil.   Reduce heat to medium-low and simmer for 30 minutes.
