Skirt Steak with Salsa Verde

Servings: six

Ingredients

1½ pounds skirt steak
¼ cup olive oil
1 lemon, zest and juice
2 cloves garlic, minced
¼ cup flat-leaf parsley, chopped
½ teaspoon kosher salt
¼ teaspoon fresh ground pepper
1 bottle store-bought all-natural salsa verde

Directions

Combine the oil, lemon juice, zest, garlic, parsley salt, and pepper in a resealable bag.  Add the steak and marinate in the refrigerator at least 4 hours.  Bring to room temperature before proceeding.

Preheat the grill for high direct heat.  Coat the grill with cooking spray.  Grill the steak for 3-4 minutes per side.  Allow to rest for 5 minutes.  Slice across the grain and top with a little salsa verde.
