
Super Quick Pork Fajitas
Servings: six
Ingredients
1½ lbs pork tenderloin, thinly sliced
2 tablespoons olive oil
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
2 cloves garlic, minced
1 tablespoon unsalted butter
1 red bell pepper, sliced matchstick thin
2 jalapenos, sliced matchstick thin
1 red onion, sliced matchstick thin
1 bok choy, sliced matchstick thin
6 whole wheat tortillas
Salsa, your favorite homemade (try our Rainbow Salsa) or store-bought.
Directions
Combine the 2 tablespoons of the oil, garlic, salt and pepper in a bowl. Rub the mixture into the pork.
Heat 1 tablespoon of oil over high heat in a large skillet. Add the pork a few pieces at time, browning each side. Set pork aside.
Reduce heat to medium and add butter to the pan. Toss in the vegetables and sauté until beginning to soften. Return the pork to the pan and cook for another 3-4 minutes.
Preheat a large non-stick skillet over high heat. Add the tortillas to the pan and fry each side for 30 seconds. Top tortilla with pork fajitas and salsa.
