
Spaghetti with Asparagus and Goat Cheese
Servings: six
Ingredients
1 lb whole-wheat spaghetti
½ cup olive oil
½ pound asparagus, trimmed and cut into 2-inch pieces
2 cloves garlic, minced
¼ pound cherry tomatoes, sliced in half
2 tablespoons basil, chopped
4 ounces goat cheese
¼ cup Parmesan cheese
Kosher salt and fresh ground pepper
Directions
Bring a large pot of water to a soft boil. Add spaghetti and cook following package directions. Drain pasta and set aside
Heat olive oil over medium heat in a large non-stick pan. Add asparagus and cook for 5 minutes. Add garlic and cook for 1 minute. Add the cherry tomatoes and basil, and spaghetti. Continue to cook until heated through. Remove form heat and season with salt and pepper. Toss with both cheeses and serve.
