
Salmon with Rainbow Salsa
Servings: six
Ingredients
6 (4-ounce) salmon filets
1 tablespoon olive oil
1 lime
Kosher salt and fresh ground black pepper
Rainbow Salsa
5 plum tomatoes
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 orange bell pepper
1 jalapeno pepper
1 small onion
2 cloves of garlic, minced
Kosher salt to taste
Directions
To make the salsa: coarsely chop the tomatoes, bell peppers, onion and jalapeno. Place tomatoes, peppers, onion and garlic in a food processor. Pulse a few times to desired consistency. Season to taste. Add an additional jalapeno for more heat.
Preheat grill over indirect medium heat. Rub salmon filets with olive oil and season with salt and pepper. Grill the salmon for 3-4 minutes per side. Remove from heat and drizzle with lime juice. Top with salsa and serve.
