Grilled Fish Sandwich with Avocado Horseradish Dressing
6 white fish filets (halibut, swordfish, tilapia…)
Red pepper flakes
Fresh ground pepper
6 whole-wheat sub rolls
2 tomatoes, sliced
1 head leafy green lettuce
Avocado Horseradish Dressing
¼ cup Greek yogurt
1 clove garlic, minced
1 shallot, minced
2 tablespoons horseradish sauce
1 tablespoon low sodium soy sauce
1 tablespoon lime juice
½ teaspoon lime zest
1 avocado, peeled, pitted, and chopped
Kosher salt and fresh ground pepper
Preheat grill using medium indirect heat.
Brush fish with olive oil and season with coriander, pepper flakes, salt and pepper. Place fish directly on the grill, or grill pan. Squeeze with lemon juice. Grill for 3-4 minutes per side.
To make the dressing: combine the yogurt and next 6 ingredients. Add the avocado and mash to combine. Season with salt and pepper.
Spread 1-2 tablespoons of dressing on a roll. Top with a filet, tomatoes and lettuce.Tags: Fish/Seafood, Summer Fresh —
