
Broccoli Slaw
Servings: six
Ingredients
2 heads of broccoli, thinly sliced or chopped
½ red onion, thinly sliced
½ cup pistachio nuts
¼ cup dried cherries
Yogurt Dill Dressing
1 cup plain yogurt
¼ cup olive oil
1 tablespoon honey
1 teaspoon rice wine vinegar
1 lemon, zest and juice
1 clove garlic, minced
2 tablespoons fresh dill, chopped
½ teaspoon dry ground mustard
½ teaspoon kosher salt
¼ teaspoon fresh ground pepper
Directions
Combine all of the salad ingredients. Toss with dressing and serve.
To make the dressing: place all dressing ingredients in a bowl and whisk to combine. Refrigerate until ready to use.
